i pretty much work exclusively in photoshop these days. what looks like pencil is actually a custom brush tip that i created for myself. the tablet i use is an intuos 4.
as for the process itself, i think it’s easiest if you just look at some older videos on my livestream.
(contains some nsfw pictures too, usually marked as “naughty stream”, though livestream derped with some and split them into multiple parts.)

i’d say earth, actually. there’s a certain roundness to their overall appearance, and with the others, i forget the “extra bits” at times (especially unicorns!).
earth ponies also have no initial advantages, so you don’t have to think as much about initial flaws to counteract them. they’re pretty well rounded from the start.
unicorns have a certain inherent aggressiveness to their design, so they tend to work better for more sensual/sexual characters (in my opinion), and i’m not quite sure what to make of pegasi. you could say they elude my grasp.
and alicorns…just no. it’s pretty much impossible to make a well-rounded character that is an alicorn, because from the start you have an overpowered character. in the context of storytelling, it’s pretty damn hard to feel sorry for a character who can fly AND do magic.
(i think i went off on a tangent a bit here by equaling “draw” with “create”. visually, they’re all similarly pleasant)
i finally took the time to draw another page for my Elements of Discord.
and if you don’t know these guys yet, i recommend starting from the beginning.
